Fudge Brownies

by - January 31, 2017

Whenever I'm back home (Philippines) I always go to this brownies store in SM and buy like 4 boxes of it and take them back here in Abu Dhabi.  I love their brownies. It's so good. I told myself I'm going to make some.  So now, when cravings kick in I don't have to fly to Philippines to have a taste of it 😊.  And I am proud that my recipe is even better. 😃

Here's the recipe for my fudge brownies. Enjoy!

Prep & Baking Time: 45-60 mins
Serves: 12 Squares

Ingredients:

6 oz or 1 cup Bittersweet Chocolate Chips
1 stick or 125g Unsalted Butter
1 1/4 cup Granulated Sugar
3 Large Eggs
1/4 cup Unsweetened Cocoa Powder
2 tbsp Espresso Powder / Coffee Powder
1/2 tsp Salt
1/2 cup Flour

1. Pre-heat your oven to 350 degrees Fahrenheit.
2. Line an 8x8 inch square pan with parchment paper and set aside.
3. Melt your butter and chocolate chips into a bowl over simmering heat pan. Stir well with a rubber spatula.  Once chocolate and butter is fully melted, remove from the heat and wipe the bottom of the bowl to avoid condensation.
4. Add sugar to the mixture (half at a time).  Stir with whisk and make sure that sugar is dissolved.
5. Then add eggs one at a time.  Make sure eggs are well mixed to the batter.
6. Then add the cocoa powder and salt. Mix well.
7. Add the flour and fold it in to the batter.  Make sure flour is well incorporated.
8. Pour the batter into the pan and bake for about 35-45 minutes.  To check if the brownie is cooked, open the oven at 30 minute mark.  If the top looks set (dry), insert a toothpick at the middle and if it comes out with dry crumbs then it's perfectly baked.
9. Let the brownie in the pan cool for 20 minutes before slicing.
10. Slice them with warm knife and serve.
